Homemade Lollipops that I made as a kid - umpteen years ago.
Ingredients
¾ cup Karo Syrup 4 cups granulated sugar 2 cups of water Food Coloring Flavoring (1 tablespoon)
Utensils
- 1 Large Pot
- 1 Wooden spoon
- 24 Popsicle stick
- 2 - 12 whole muffin tins
- Plastic wrap
- Nonstick Spray
Preparation
1) In LARGE POT, combine ¾ cup Karo Syrup, 4 cups granulated sugar, and 2 cups of water. 2) Stir well with wooden spoon. 3) Heat mixture while stirring with wooden spoon. 4) Once mixture begins to bubble, test one drop of mixture in a cup of cold water. Mixture is done when a drop turns into a hard bubble with a tail when dropped into cold water. 4) Remove from heat, add color and flavoring. Stir in briefly. 5) Pour while hot into sprayed muffin tins and add one popsicle stick per well. 6) Allow to cool - the lollipops will set firmly with cooling. 7) Remove cooled lollipops from tins and enclose in plastic wrap to enjoy later.

Alternatives
- If lollipops don't harden, then the mixture was not heated long enough.
- If lollipops crystallize, there was too much stirring after adding the flavor and color.
- If lollipops are brown, the solution was not stirred well, or it was cooked too long.
- If lollipops harden with expected color, they were cooked to order.
PLEASE NOTE: The amount of flavoring may be off (I had to convert only that part from ml to tablespoons). If you would like more flavoring, add more the next time you make them. If the flavor is too strong, reduce the flavoring added.
